How To Cook A Simple Butter Broccoli


New and simple recipe to try on for a non-cook like me. Good luck!

Ingredients
A bunch of broccoli (Cut into pieces)
4-5 gloves of garlic (Chopped)
3-4 spoons of butter
Tad bit of salt
Tad bit of pepper

Method
Heat a non-stick pan and put the butter onto it.

When it is already melted, add the garlics.

Wait for few minutes, then add the broccoli as well as salt and pepper. Stir-fry.

How To Cook A Simple Carbonara Spaghetti


Hi! I have been wanting to post this recipe for so long but did not get the chance. My niece, Hanis has been asking for it while Farouk requested that i cook it once more. I guess they really like it. So, here is the recipe :-

Ingredients
500 grams of spaghetti (Any brand will do)
1 tin of Frego Carbonara
Some chicken or beef cubes
Some red onions (Chopped)
Some garlics (Chopped)
1/2 cup of fresh milk (I use low fat milk)
1 spoon or 2 of butter
Tad bit of oil
Tad bit of salt
Tad bit of pepper
Tad bit of parsley leaves

Method
Cook the spaghetti as usual. Put some oil / butter into the pot before boiling it to prevent from sticking.

Heat a non-stick pan, sprinkle some oil and pour a mixture of red onions and garlics onto the pan until they are well-cooked.

Once cooked, pour the carbonara sauce together with the chicken / beef cubes and stir it until the mixture becomes sticky.

Then, slowly pour the milk into the sauce until it is creamy.

Lastly, add salt and pepper as well as some parsley leaves for decoration.

How To Cook A Simple Salmon Tempura



I have promised Areej to cook the dish when we bought 2 slices of salmon fillet at Jusco for her the other day. So, here is the recipe :-

Ingredients
1 slice of salmon fillet (Cut it into cubes and get rid of its bone)
1 egg
3 spoons of wheat flour
1/2 cup of oil
Tad bit of salt
Tad bit of pepper
Tad bit of nutmeg

Method
Mix the salmon cubes with egg, wheat flour and a bit of salt, pepper and nutmeg.

Heat a cooking pan and pour the oil onto it.

When it is ready, deep fry 3-4 cubes at one time around 3 minutes.

Best to serve while it is still hot.

How To Cook A Simple 'Nasi Lemak'


Farouk has been requesting that i would cook for him 'Nasi Lemak' someday. As everybody knows, cooking is not my cup of tea but as time goes by, bit by bit, i would say that i have learned few recipes and skills that i found interesting and worth it to try on and  it was 2 weeks ago when i cooked my first 'Nasi Lemak'.

Here is the recipe :-

Ingredients / Method

'Nasi' (Rice)
2 pcs of big onions (Chopped)
1 pc of garlic
6 slices of ginger
6 cups of rice
3 cups of coconut milk
41/2 cups of water
Tad bit of salt

Pour all the coconut milk into the rice pot follow by some water.

Add a little bit of salt and put the ginger slices in between the rice.

Cook the rice as usual.

'Sambal' (Condiment)
1 pc of big onion (Chopped)
3 cloves of garlic
A handful of dried anchovies (To be soaked with water)
1 packed of chilli paste
Tad bit of salt
Tad bit of shrimp paste
Tad bit of oil (Preferably olive oil)
1 cup of water

Heat your non-stick pan and pour the oil onto the pan.

Wait for 2-3 minutes and fry the mixture of onion and garlic together until you can smell the fragrance.

Then add 6 spoons of chilli paste and some salt  and shrimp paste to the mixture and cook it well.

Fry the dried anchovies in a different pan until they are cooked and crunchy. 

After the mixture is ready, pour the cooked anchovies onto the pan.

Add the water bit by bit when it is necessary until the condiment is cooked.

Side Dishes
6 pcs of egg (Each one to be boiled and when it is ready, to be cut into two-sided)
A handful of peanuts (To be fried well until they are cooked and crunchy)
A handful of anchovies (To be fried well until they are cooked and crunchy)
1/2 portion of a cucumber (Optional)

How To Make A Simple Chicken Oatmeal Porridge


This receipe is actually from Ibu. She taught me during the first year i married Farouk. Everybody happens to like it including Farouk and he cooks it well rather than myself. This morning, woke up early and thought of having it for breakfast. Simple, fast, healthy and most of all, it tastes delicious too.

Here is how to prepare it :-

Ingredients   
5 spoons of oatmeal
1 spoon of olive oil
Tad bit of pepper
21/2 cups of water
1 pc of big onion (Chopped)
3 gloves of garlic (Chopped)
1 cube of chicken stock

Method 
Heat a non-stick pan for 2-3 minutes and sprinkle the olive oil all over the pan.

When it is ready, fry the onion and garlic until you can smell the fragrance.

Add water and crush the chicken stock into the pan. Wait until it bubbles before putting the oatmeal.

Add the pepper and stir it well until the texture becomes thicker.

Have it while it is still hot.

Some may like to add chicken cubes or scrambled eggs to go with the porridge but i kind of like it the way Ibu has taught me.

How To Make A Simple Macaroni & Cheese


As i mentioned in my previous entry, i did make some macaroni and cheese for a get-to-together with my family members at home last sunday. A first timer and lacked of cooking experience, not to mention not a good cook as i am, at the end i managed to impress myself with the result and my family members ; Papa, Ibu and Adik added the 2nd serving after finishing the 1st one. I guess they liked it.
    
Here is my recipe. Got it from Google.

Ingredients
400-500 grams of macaroni pasta
30 grams of butter
3 spoons of flour
2 cups or 500ml of fresh milk
1/2 tea spoon of paprika
2 cups or 200 grams of grated cheese (A mixed of cheddar and parmesan)
Tad bit of salt and pepper
Extra grated cheese or breadcrumbs (Optional)
Parsley flakes (Optional)
Beef rashers (Optional)

Method
Cook the pasta as instructed in the packet.

Melt the butter in a pot or non-stick pan with a moderate flare. Add the flour and stir it for 2-3 minutes. Always stir it to prevent the mixtures from burning.
Add 1/2 cup or 250ml of fresh milk. And again, always stir it to prevent lumps in the sauce. Stir the sauce until it bubbles and become thicker. Repeat the above until all the milk is poured in the pot / pan. Let it bubbles for 1 minute and off the stove. 

Add the cheese and paprika all together and stir it until the cheese is melted and its sauce becomes smooth and creamy.

On the stove with a moderate flare. Add the salt and pepper and for myself, i chose to add some parsley falkes to the sauce. Some may like to add a bit of beef rashers as well to intensify the flavour. Depends. 

Drain the pasta and stir it through the melted cheese. You can add extra cheese or breadcrumb if you want to. You can also eat it straight away or put it under the griller to melt the topping.

Eat it while it is still hot:)

How To Make A Simple Fried Seasoning Salmon

My daughter, Areej is a big fan of salmon. Everytime we decided to go Western, she will make us know that she wanted salmon for her meal.

Yesterday was a bit hectic. I cleaned the house, went out for a while in the afternoon with Farouk and Areej to settle our bills and later in the evening, i have decided to cook for dinner and invited Ibu as well as Adik (My younger sister) to come over and join us.

For the adults, i have cooked Macaroni And Cheese and for my little Areej, Fried Seasoning Salmon was specially made for her and i can see that she smiled widely after eating it. 

Here is the recipe :-

Ingredients
1 piece of salmon
Tad bit of olive oil
Tad bit of salt
1 spoon of seasoning sauce
1/2 spoon of parsley flakes

Method
Cut the salmon into cubes and marinate it with the seasoning sauce.

Add salt and parsley flakes to the marinated salmon and mix them together.

Heat a non-stick pan and sprinkle the olive oil all over the pan.

When it is hot enough, stir-fry until it is cooked.

Best to serve it hot with rice.
